Caribou Jumble

This one is fast, easy, and tasty.

Ingredients

1 lb. ground caribou
1 medium onion, chopped
3 cloves garlic, diced
1 cup chopped celery
1 cup sliced mushrooms
1 cup chopped green beans
Salt to taste
Pepper to taste
Red pepper flakes to taste
¼ cup half and half at the end

Saute the chopped onion in a little oil until translucent, then add the meat. Cook until the meat is almost done, then add all the rest except the half and half, which goes in about seven minutes after all the rest was added. Stir and finish it off simmering. Serve over wild rice. Can add some Worcestershire and extra pepper flakes to individual servings if desired.

We’ll often cook up a batch of rice during the week planning to have some left over that can be quickly re-heated to go with whatever main course is desired. If you’re not pulling out some previously made rice to re-heat, start making the rice before assembling the jumble.
