Tongue is a rare treat, and Rose and I both enjoy it. This is one of our favorite recipes for cooking it. Enjoy!
Ingredients
2 caribou tongues
2 onions
5 cloves garlic
1 jalapeño
1 can diced tomatoes
1 tsp oregano
1 tsp thyme
4 chilpotles in adobo
Salt to taste
Wash tongue well. Roughly chop one onion and put it in a pot with the tongues. Cover with water and a lid and cook/simmer for 3 hours. Cool a little and peel the tongues while they are still warm. Chop the second onion and sauté until translucent. While these cook, chop the garlic and peppers and cut the peeled tongue in ~1/4 in. slices across the length. (Wild tongue is not as tender as domestic; you can chop it finely now, or…) Add all the other ingredients but the tongue to the onions and simmer and stir. Add sliced tongue and continue simmering for ~30-40 minutes more. The tongue should be tender now and can be broken up into smaller pieces using a spatula and a fork. Stir up well and serve. It is great as tacos de lengua, or you can serve it over rice or pasta.
