Ground game meat can be a little intense — maybe a little tough when it’s cooked, or perhaps a little strongly flavored for some. We figured out a way to make it wonderful every time. It’s magic.
Ingredients
1 lb. ground caribou or moose
½ cup cracker crumbs
1 egg
1 Tbsp Worcestershire sauce
1-2 tsp pepper flakes
½ tsp salt
¼ C half and half (or a little less)
Put everything into a high-sided bowl and have at it with a potato masher to mix it up well. Get a pan with some oil in the bottom hot while doing this. Make the patties and lay straight into the pan. Sprinkle with a little more salt and ground black pepper. I like to cook the burgers slowly in olive oil (this recipe is a little too soft for the grill). When halfway done, flip to cook the second side. Poke the center when nearly done to check – emerging juices should turn from red to clear to opaque as they finish. Makes four burgers.
